If you are from the Midwest, chances are you’ve had a maid rite (or at least heard of them). It is simply a loose meat sandwich made with seasoned ground beef. Not only are they delicious, they are also so easy to make! The perfect food to serve for a crowd or when you are just wanting a quick, simple dinner at home with family.
While there are many variations on how to make them, here is my version!

✷1 lb ground beef
✷1 can beef consommé soup (10 1/2oz)
✷onion powder (to taste)
✷small hamburger buns
Toppings (optional): ketchup, mustard, cheese and/or pickles

In a large skillet, brown your ground beef over medium heat, finely chop & drain. Add soup to browned ground beef and a few generous shakes of onion powder. Cook/boil down the mixture until no liquid remains. Add meat to buns. That’s it! Easy peasy. Top with your favorite condiments and serve with a side of chips or fresh fruit!↓ Pin it for later ↓
The first time I had ever heard of or tasted pizza hotdish was when my husband made it for me (yes, he cooks occasionally). Needless to say, I went back for seconds! Since this recipe makes plenty, we always end up with leftovers, which is perfect if you have a large family. And while it isn’t the prettiest dish to photograph, it sure is tasty!

✷1 lb Italian sausage
✷1 package of pepperoni slices
✷16 oz box of medium shell noodles
✷24 oz jar of 3 cheese spaghetti sauce
✷1 oz package of dry ranch seasoning mix
✷16 oz container of sour cream
✷2 cups of shredded cheese (pizza blend or Colby jack works well)

Preheat oven to 375°F
Bring a large pot of water to boil, and pour in entire box of noodles. Cook to al dente & drain.
In a heated skillet, thoroughly cook your Italian sausage and finely chop. While your noodles and sausage are cooking, in a 9″x13″ pan combine pasta sauce, ranch mix and approx. 3/4 of the container of sour cream. Stir until blended. Add in cooked noodles, sausage, and as many pepperoni slices as you like. Top with cheese & place into oven. Bake for 30 mins.
If you’ve never had pizza hotdish, I highly suggest you make this ASAP.

There aren’t many memories I have of my grandma, but her fresh baked zucchini bread will always be a cherished one. I can remember walking into my grandparents’ house with the delightful smell of zucchini bread baking in the oven. It was a treat I always looked forward to knowing we were going for a visit; that and those little fudge striped cookies with the hole in the middle. She always had those, and we would eat them off of our pinky fingers, pretending to be fancy with our tea.
I wish I could have had more time to spend with my Grandma Cecilia. My mother has told me stories about how she used to bake fresh traditional bread for the whole neighborhood, about 20 loaves, every week! My mom, when she was little, would help her punch down the dough after it would rise. And how the neighbor kid would eat almost half the loaf she gave him just going home, until my grandma started making him his own little loaf.
Zucchini bread was grandma’s favorite, and she always said it was “better than banana bread”. I actually hadn’t had zucchini bread for quite a long, long while; until I asked my mom for my grandma’s recipe. And I’m so happy I did. It is just as good as I remember it being when I was a little girl.

-Makes 2 loaves-
✷3 cups flour
✷1 tsp salt
✷1 tsp baking soda
✷1/4 tsp baking powder
✷1 tbsp cinnamon
✷3 lightly beaten eggs
✷1 cup brown sugar
✷1 cup granulated sugar
✷1 tbsp vanilla
✷3/4 cup vegetable oil
✷3 cups grated zucchini (about 2 large zucchinis)
*optional – add in 1 cup nuts*

Pre-heat oven to 350°F
Mix together dry ingredients in a large bowl & set aside.
In another bowl, mix the eggs, sugars, oil & vanilla with a stand or hand mixer until just blended. Next, stir in the grated zucchini by hand.
Combine the dry ingredients into the zucchini mixture by slowly stirring in a little at a time, until all ingredients are mixed. *add in nuts at this point if desired*
Spray loaf pans with non-stick baking spray, and divide mixture between 2 loaf pans (9″ or 8″). Bake for 55 mins.
Let cool, slice, and enjoy with a spread of butter!
My mother-in-law introduced me to this recipe way back when I was pregnant with my son.
I never knew making a sweet, delicious fruit dip was so easy. Three ingredients, that’s it.
And it is so good, you’ll want to eat ALL THE APPLES!
✷8oz block of cream cheese (softened)
✷1/2 cup brown sugar
✷1 tsp of vanilla
( + apples to dip )
Place ingredients in a bowl and mix until smooth. Chill in refrigerator for 30 mins and enjoy! (I’ve only tried this dip with apples, but I bet it would be great with other fruit as well)

Does anyone else love simple, quick recipes as much as I do? This pizza is a family favorite and so easy to make! It’s one of my son’s favorite meals, and he loves to help put it together. I love the no-fuss tortilla crust; thin with the perfect crunch. I usually prepare the chicken and broccoli ahead of time, then when it’s time for dinner we just throw the pizzas together in less than 10 minutes and into the oven they go!
-Serves 4-6 people-
✷ 4-6 eight inch flour tortillas
✷ 1 jar of Alfredo sauce (my favorite is Classico)
✷ 2 fully cooked chicken breasts (chopped)
✷ 1 bag frozen broccoli florets (cooked & chopped)
✷ 2 cups shredded mozzarella cheese
✷ ground black pepper
Preheat oven to 400°F.
Place 2 tortillas on a 16″x12″ baking sheet. Spread approx. 2 tbsp of sauce on top of each tortilla. Sprinkle on some of the chopped chicken & broccoli. Top with a handful of shredded mozzarella and a few shakes of pepper. Bake for 12-15 minutes (depending on how browned you like your cheese). If taken out too soon, you will end up with a floppy crust. Let cool for a couple minutes, slice and eat!
(Repeat until you have your desired servings of pizza; store leftover ingredients in air tight containers placed in refrigerator)
Our family typically makes 1 pizza per person, with the exception of the littlest, she eats about 1/3 of one. We usually end up with a small amount of leftovers, perfect for making a pizza for lunch the next day!
